2015 is quickly coming to an end and that can only mean one thing....we'll all be attending those holiday parties soon and some of us might be hosting. Sobeys Parm Night couldn't have come at a better time because this year we're determined on being the best hosts as we can be!
1 cup of freshly grated Parmigiano Reggiano
1 glove garlic minced
1 tablespoon finely chopped fresh parsley
1 tablespoon finely chopped fresh chives
1/2 teaspoon finely grated lemon zest
1/4 teaspoon pepper
1. Preheat oven to 350 degrees. Toss cheese with garlic, parsley, chives, lemon zest and pepper until combined. Mound generous tablespoons with mixtures onto parchment lined baking sheets at least 2 inches apart. Tap down gently with the back of a spoon to flatten slightly.
2. Bake 7 to 10 minutes or until golden and crispy. Cool completely, store in an airtight container between wax or parchment paper, up to two days.
We can't tell you how easy it was to make this recipe and it's so easy to elevate simple dishes. Try it in a soup to create some colour or in a salad as an extra topping or even in place of croutons. It'll even go well with some pasta, the possibilities are endless!
