RECIPE | quick & easy butter-free oatmeal raisin cookies

I LOVE cookies whether it's baking or eating them :)! Sometimes it's hard to find a recipe that's a bit on the healthier side because most cookie recipes ask for a lot of butter. The following recipe has no butter and uses oil instead. 

These cookies are super easy to make and don't require a lot of clean up! You can substitute the raisins for other dried fruit like cranberries or even chocolate chips but if you are adding in chocolate chips, I would omit the granulated sugar altogether or it might be too sweet!

This recipe makes about 12 cookies:

1 egg
1/2 cup brown sugar
1/4 granulated sugar
1/3 cup corn oil
1/2 tsp baking soda
1/2 tablespoon hot water
1/2 tsp cinnamon
1/2 tsp vanilla extract
1/2 tsp salt
3/4 cups all purpose flour
3/4 cups quick rolled oats
1/4 cup raisins


1. Preheat oven to 350 degrees F.
2. Beat the egg until frothy.
3. Mix in brown and granulated sugar. Add in cooking oil and vanilla.
4. Dissolve baking soda in the hot water and add it into the mixture.
5. Add oats, flour and cinnamon to the wet mixture and mix until everything is combined.

6. Fold in the raisins. Your mixture should look be wet like the picture.
Don't worry, it will still bake properly!

7. Bake in the oven for 10-12 minutes or until a golden brown. If you want them to be a bit crispier, leave it in for an extra minute. Cool completely on a wire rack.
